Tater Tot Casserole

Ingredients:

  • 1 lb Ground Beef
  • 1/4 Onion, diced
  • 1/2 Red Pepper, diced
  • 1/2 Green Pepper, diced
  • 1/2 Poblano Pepper, deseeded and diced
  • 1 Serrano Peopper, deseeded and diced
  • 3 Garlic Cloves, minced
  • 4 Tbsp Butter
  • 1/3 cup Flour
  • 2 tsp Hot Sauce
  • 2 tsp Soy Sauce
  • 2 tsp Worcestershire Sauce
  • 2 cups Milk
  • 1/4 cup Sour Cream
  • 1/2 cup Frozen Corn
  • 2 cups of Sharp Cheddar Cheese
  • 1 bag of Tater Tots
  • Salt
  • Pepper

Directions:

  1. In a cast iron skillet brown the ground beef.
  2. Once the beef is brown, remove as much of the fat as you can from the skillet.
  3. Push the beef off to the side and add 2 Tbsp of olive oil to the skillet and add the onion, peppers, and garlic to the skillet and mix the meat and the vegetables together and let cook until the vegetables are soft.
  4. Push the meat and vegetable mixture off to the side, again, and add 4 Tbsp of butter.
  5. When the butter has melted, sprinkle in the flour and whisk to fully incorprate the flour into the butter and brown for a couple of minutes. It will create a thick paste.
  6. Whisk the soy, worcestershire and hot sauce into the paste and cook for one minute.
  7. Slowly add the milk and continually whisk to create the gravy.
  8. When the mixture has smoothed out, slowly start adding the meat and vegetable mixture into the gravy.
  9. Cook for 10 minutes until the gravy has thickened.
  10. Add the sour cream and 1/4 cup of cheese.
  11. Once the sour cream and cheese have fully combined into the dish, remove from the heat and add a layer of toter tots.
  12. Top with the rest of the cheddar cheese.
  13. Cook in a preheated oven at 350°F for about 30 minutes or until nice and bubbly, the tater tots are cooked and the cheese is melted.
