Ingredients
- 1 pound ground beef
- 12 oz thin rice noodles
- 8 oz Mushrooms, sliced
- 1 carrot, thinly sliced
- 2 handfuls Baby Spinach
Sauce Ingredients
- 1/4 cup low sodium Soy Sauce
- 1/4 cup Water
- 1/4 cup Coconut Cream
- 2 tsp Tomato Paste
- 2 Tbsp Honey or Brown Sugar
- 2 tsp Sesame Oil
- 1 Tbsp Rice Vinegar
- 2 cloves Garlic, minced
Directions
- Bring a pot of water to a boil, add salt and cook noodles according to package instructions. Drain and rinse.
- Whisk together all sauce ingredients in a bowl and set aside.
- While the water is boiling, add the ground meat to a large skillet and saute until cooked through. Drain meat and spoon meat into a bowl and set aside
- Add mushrooms and carrots to the skillet and saute until soft (approx 5-7 min).
- Add the drained noodles, beef and sauce into the skillet with the vegetables along with the spinach. Mix well to combine.
- Cook noodles on low until sauce thickens (approx. 5 min).
