Spicy Beef Noodles

Ingredients

  • 1 pound ground beef
  • 12 oz thin rice noodles
  • 8 oz Mushrooms, sliced
  • 1 carrot, thinly sliced
  • 2 handfuls Baby Spinach

Sauce Ingredients

  • 1/4 cup low sodium Soy Sauce
  • 1/4 cup Water
  • 1/4 cup Coconut Cream
  • 2 tsp Tomato Paste
  • 2 Tbsp Honey or Brown Sugar
  • 2 tsp Sesame Oil
  • 1 Tbsp Rice Vinegar
  • 2 cloves Garlic, minced

Directions

  1. Bring a pot of water to a boil, add salt and cook noodles according to package instructions. Drain and rinse.
  2. Whisk together all sauce ingredients in a bowl and set aside.
  3. While the water is boiling, add the ground meat to a large skillet and saute until cooked through. Drain meat and spoon meat into a bowl and set aside
  4. Add mushrooms and carrots to the skillet and saute until soft (approx 5-7 min).
  5. Add the drained noodles, beef and sauce into the skillet with the vegetables along with the spinach. Mix well to combine.
  6. Cook noodles on low until sauce thickens (approx. 5 min).
