Ingredients:
- 1/2 cup Butter, softened
- 1/2 cup Brown Sugar, packed
- 1/4 cup Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 3/4 cup Flour
- 1/2 tsp Baking Soda
- 3/4 tsp Cinnamon
- A Pinch of Salt, literally
- 1 1/2 cup Old Fashioned Quick Oats
- 1/2 cup Raisins
Directions:
- Cream butter and sugars together using a stand mixer or a hand mixer.
- Add egg and vanilla extract to mixer and fully incorporate into the sugar and butter.
- Sift the flour, baking soda, cinnamon and pinch of salt into a bowl.
- Slowly add the dry ingredients to the wet ingredients until fully incorporated. I like to do this in 3 batches.
- Add the oats to the dough and mix thoroughly.
- Hand fold in the raisins. I like doing it by hand so the raisins stay in tact.
- Using a small ice cream scoop (1/3 – 1/2 oz depending on how big of cookies you want) and scoop cookie dough onto cookie sheets (9 -12 per sheet).
- Bake the cookies for 8 minutes in a preheated oven at 350°F.
- Let the cookies cool on the sheet for 30 – 60 seconds.
- Move the baked cookies to a sheet of wax paper on your counter to let them continue cooking and cool.
