Oatmeal Raisin Cookies

Oatmeal Raisin Cookies Ingredients

Ingredients:

  • 1/2 cup Butter, softened
  • 1/2 cup Brown Sugar, packed
  • 1/4 cup Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 3/4 cup Flour
  • 1/2 tsp Baking Soda
  • 3/4 tsp Cinnamon
  • A Pinch of Salt, literally
  • 1 1/2 cup Old Fashioned Quick Oats
  • 1/2 cup Raisins

Directions:

  • Cream butter and sugars together using a stand mixer or a hand mixer.
  • Add egg and vanilla extract to mixer and fully incorporate into the sugar and butter.
  • Sift the flour, baking soda, cinnamon and pinch of salt into a bowl.
  • Slowly add the dry ingredients to the wet ingredients until fully incorporated. I like to do this in 3 batches.
  • Add the oats to the dough and mix thoroughly.
  • Hand fold in the raisins. I like doing it by hand so the raisins stay in tact.
  • Using a small ice cream scoop (1/3 – 1/2 oz depending on how big of cookies you want) and scoop cookie dough onto cookie sheets (9 -12 per sheet).
  • Bake the cookies for 8 minutes in a preheated oven at 350°F.
  • Let the cookies cool on the sheet for 30 – 60 seconds.
  • Move the baked cookies to a sheet of wax paper on your counter to let them continue cooking and cool.
